Succulent Sweet and Sour Chicken

INGREDIENTS
- 9 boneless skinless chicken thighs, (cut up in cubes)
- 1 1/2 corn starch
- 1 red pepper, cubed
- 1 orange Pepper, cubed
- 1 yellow pepper, cubed
- 3 eggs, (beaten)
- salt and pepper to taste
- 2 tbsp soya sauce
- ½ cup white vinegar
- ½ cup apple cider vinegar
- ½ cup ketchup
- 2 cup sugar
- 2 tsp garlic salt
- each of a red, yellow and orange pepper, cubed
DIRECTIONS
- Put chicken into a large mixing bowl and toss with a little salt and pepper.
- Toss chicken in corn starch then in the beaten egg.
Fry chicken until golden brown (doesn't have to be cooked all the way through).
Place chicken into a greased 9in x 13in baking dish and set to the side.
- Dump all ingredients into a large bowl and whisk until thoroughly combined.
- Pour sauce over the chicken and place in the oven at 325F.
- Stir every 15 minutes for the next 60 minutes.
