Lemon, Lime and Bitters
By Sally James. A popular drink in Australia, often called the drink you have when you’re not having a drink. It’s palate cleansing and fresh, wonderful as an aperitif or just a thirst quenching beverage. Normally made with lime syrup and soda, I prefer this method with real lemons and limes. It’s one you make and taste as you go to find the blend that best suits your palate.
INGREDIENTS
- juice of 4 limes and 4 lemons
- sparkling mineral water or soda water
- Angostura bitters, to taste
- Simple syrup
- ½ cup water
- ½ cup sugar
DIRECTIONS
To prepare the simple syrup, bring the water to a boil, add the sugar and stir until sugar is dissolved. Chill until ready to use. This will make more than you need and will keep in the refrigerator for several weeks.
Place the juices in a large pitcher, add 2 cups mineral water and a tablespoon or two of the syrup. Taste and add more water and/or syrup until you have the blend that's right for you.
- Pour into glasses and shake a few drops of bitters in each glass. Stir and enjoy!
