Healthy French Fries

By Rob Barrett, Jr. My favourite food but with very little oil added. Do them in small batches and you’ll be happy and you’re kids will be too.

INGREDIENTS

  • 3 large potatoes, idaho
  • olive oil
  • kosher salt

DIRECTIONS

  1. Wash potatoes and cut into fries.
  2. Place in bowl and coat with olive oil and kosher salt.
  3. Cook in microwave until just tender, about 2 min per potato.
  4. Working in small batches, fry in a large frying pan with just a little olive oil on high heat.
  5. Work in small batches having all fries in contact with the pan - just one layer.
  6. When 3 or 4 sides are brown remove, place on a paper towel and keep warm in an oven. Repeat with next batch.
