GNOCCHI WITH CHERRY TOMATOES & BURRATA

Quick to prepare, you’ll savour this exquisite Italian classic all day!

INGREDIENTS

  • 2 tbsp olive oil , divided
  • 2 ¼ lb fresh gnocchi
  • 2 cloves garlic, minced
  • 8 oz multi-coloured cherry tomatoes , halved
  • 9 oz ball burrata or fresh mozzarella cheese
  • ¼ cup coarsely chopped fresh basil
  • to taste salt and papper

DIRECTIONS

  1. In large Meyer nonstick frying pan, heat 1 tbsp of olive oil over medium heat; cook gnocchi, stirring occasionally, until golden, about 8 minutes. Add garlic; cook, stirring, until gnocchi is tender, about 2 minutes. Mix in cherry tomatoes. Toss! Flip! Season with salt and pepper. Tear burrata into pieces; scatter over gnocchi. Sprinkle with basil and drizzle with remaining oil.
