Cranberry Orange Relish

By David Bonom and Marge Perry. The recipe for this piquant and aromatic relish may be doubled or tripled.

INGREDIENTS

  • 1 12-ounce fresh cranberries
  • ¾ cup sugar
  • 1 cup chopped onion
  • 3 tbsp cider vinegar
  • 2 tsp coarsely grated orange peel
  • 1 orange, peeled and chopped
  • 1 tbsp crystallized ginger
  • ½ tsp ground ginger
  • ½ tsp cinnamon
  • ¼ tsp allspice
  • ¼ tsp red pepper flakes
  • ¼ tsp salt

DIRECTIONS

  1. Combine all ingredients in a medium saucepan; bring to a boil. Immediately reduce the heat and simmer 20 minutes. Let cool before serving.
